    Hatsu Mukashi (初昔) is a premium Japanese matcha produced by Shogyokuen, a historic tea producer based in Kyoto. Made from carefully selected tencha, Hatsu Mukashi has a rich umami character, creamy texture, natural sweetness, and a deep, satisfying finish.

    Its full-bodied profile makes it well suited to both usucha (thin tea) and koicha (thick tea), offering a versatile option for traditional matcha preparation.

    Flavor Profile

    Rich umami leads the cup with deep vegetal notes and a creamy, full-bodied texture. Subtle nutty character and natural sweetness add balance, followed by a smooth, lingering finish with very little bitterness.

    How to Prepare Hatsu Mukashi

    Usucha (Thin Tea)

    You will need:

    • 1.5–2g matcha
    • 60–70ml water
    • Water at 75–80°C / 167–176°F
    • Bamboo whisk (chasen)
    • Matcha bowl (chawan)
    • Sifter

    Steps:

    1. Sift the matcha into a warmed chawan.
    2. Add the hot water.
    3. Whisk briskly in a W or M motion until a fine layer of froth forms.
    4. Enjoy immediately.

    Koicha (Thick Tea)

    You will need:

    • 3–4g matcha
    • 30–40ml water
    • Water at 70–75°C / 158–167°F

    Sift the matcha into the bowl. Gradually add the water and knead slowly with the whisk until the tea becomes thick and smooth. Koicha should have a dense, concentrated texture rather than a frothy surface.
