    Samidori Single-Cultivar Matcha from Uji, Kyoto

    Shōgyoku (祥玉) is a single-cultivar Japanese matcha made from Samidori, a cultivar closely associated with Uji tea production. Produced by Shogyokuen, a historic Kyoto tea producer, this matcha has a rich, savory character with pronounced umami, a creamy texture, and a naturally sweet finish.

    Its depth and body make Shōgyoku particularly well suited to both usucha (thin tea) and koicha (thick tea).

    Rich umami with fresh vegetal depth, a smooth and creamy full-bodied texture, subtle natural sweetness, and a long, clean savory finish.

    Shōgyoku opens with deep vegetal notes and pronounced umami, followed by a soft nuttiness and subtle cocoa-like richness. A gentle sweetness develops as you drink, leaving a smooth and lingering finish.

    A Single-Cultivar Matcha

    Unlike a blend made from multiple cultivars, Shōgyoku is made from 100% Samidori, allowing the distinctive character of the cultivar to come through more clearly.

    Samidori is one of the traditional cultivars associated with high-quality matcha production in Kyoto, making Shōgyoku an excellent choice for those interested in exploring single-cultivar Uji matcha.

    Ideal for Usucha & Koicha

    Shōgyoku has the depth and structure needed for koicha, while its smooth texture and balanced character also make it enjoyable as usucha.

    Usucha (Thin Tea)

    • Matcha: 2g
    • Water: 60–70ml
    • Temperature: 75–80°C / 167–176°F

    Sift the matcha into a warmed chawan. Add the water and whisk briskly in a W or M motion until a fine, even froth forms.

    Koicha (Thick Tea)

    • Matcha: 3–4g
    • Water: 30–40ml
    • Temperature: 70–75°C / 158–167°F

    Sift the matcha into the bowl. Gradually add the water and knead slowly with a whisk until thick and smooth. Koicha should have a dense, concentrated texture without a layer of froth.
