Uji Matcha from Kyoto, Japan
Kasuga no Mukashi (香寿賀の昔) is a highest-tier koicha grade matcha from Yamamasa Koyamaen, a historic tea producer based in Uji, Kyoto. Positioned at the top of their catalog, it maintains a smooth, rich umami profile without bitterness even at high concentrations. It can be mixed into a traditional thick paste (koicha), or whisked into a rich, full-bodied usucha (thin tea).
Flavor Profile
The flavor architecture of Kasuga no Mukashi is built around a highly concentrated umami base and a heavy, viscous mouthfeel. Aromatically, it is driven by mirume-ka—the signature scent of early-harvest shaded tea shoots—which provides a bright, fresh contrast to the tea's rich, savory foundation. The finish leaves a clean, lingering sweetness on the palate with no residual astringency.
