Samidori Uji Matcha from Kyoto, Japan
Samidori (さみどり) is a high-grade ceremonial matcha from Yamamasa Koyamaen, a historic tea producer based in Uji, Kyoto. Positioned in the upper tier of their ceremonial lineup, this tea is formulated to meet the structural standards required for koicha (thick tea) through traditional gogumi (master blending).
It offers a dense, smooth body with pronounced umami and low astringency, performing as a rich, velvety koicha or a sweet, full-bodied usucha (thin tea).
Flavor Profile
Samidori features a vivid, deep emerald color and a rich, creamy mouthfeel. On the palate, it delivers a savory umami base balanced by soft, natural sweetness, with virtually zero sharp bitterness or harsh astringency. It finishes smoothly with a clean, lingering sweetness.
Best For
Samidori is particularly suited to:
- Koicha (thick tea)
- Usucha (thin tea)
- Traditional tea ceremony rituals
- Straight matcha (hot or iced)
Its smooth texture and high umami concentration allow it to knead into a thick, paste-like koicha, while whisking into a rich, sweet bowl of usucha.
