    High-Quality Koicha from Kyoto, Japan

Seiun (星雲) is a high-quality koicha grade matcha from Yamamasa Koyamaen, a historic tea producer based in Uji, Kyoto. Formulated specifically for koicha (thick tea), it provides the dense structure required for kneading, while also whisking into an exceptionally rich, full-bodied usucha (thin tea).

    Flavor Profile

Seiun produces a deep green liquor with a heavy, velvety mouthfeel. The flavor structure is built on an intense umami base and a robust sweetness, accented by distinct toasted seed aromatics. It finishes with a long, lingering aftertaste and minimal astringency.

    Best For

    Seiun is particularly suited to:

    • Koicha (thick tea)
    • Usucha (thin tea)
    • Traditional tea rituals
    • Drinkers seeking a robust, full-bodied flavor profile with heavy umami

    How to Prepare Seiun

    Koicha (Thick Tea)

    You will need:

    • 3–4g matcha

    • Water at 75–80°C / 167–176°F

    Steps:

    1. Sift the matcha into a warmed chawan.

    • 60–70ml water
    • Water at 75–80°C / 167–176°F
