When you hear “burdock tea,” you might imagine a strong, earthy bitterness. We always assumed it was healthy but not something we’d drink casually… yet this tea completely changed our mind.

The aroma that rises as you sip is wonderfully fragrant, and you can enjoy its natural umami and gentle sweetness. Despite that depth of flavor, the finish is incredibly clean and refreshing.

The burdock used in this tea is grown in fields overlooking the Shirakami Mountains. These fields sit on sandy soil near the Sea of Japan, separated only by a windbreak forest. The sandy terrain allows the burdock roots to grow straight and deep without obstruction.

What makes it even more special is that the burdock is left in the ground over winter and harvested in early spring after the snow melts. During this time, the plant naturally changes its composition to avoid freezing. Specifically, the water‑soluble fiber inulin breaks down into fructooligosaccharides — increasing the natural sweetness.

In other words, overwintering makes the burdock even more delicious.

The tea uses the whole burdock root, including the skin, which is rich in antioxidant polyphenols. It’s finely ground to ensure maximum extraction of flavor.
