Isuzu Matcha: A Bold and Vibrant Experience
Isuzu, from Marukyu Koyamaen, presents a more assertive matcha profile compared to its predecessor, Aoarashi. It distinguishes itself with a pronounced character and a vibrant flavor profile rich in sharp, tart amino acids. For a gentler experience, consider preparing Isuzu with water at a lower temperature, around 70°C (158°F). This technique effectively softens the tartness and enhances the overall smoothness.
Preparation Guide:
- Measure: Add 2 grams (approximately 0.4 US teaspoon, 1 teaspoon, or 2 chashaku scoops) of Isuzu matcha powder to a suitable tea bowl.
- Infuse: Pour 70 milliliters (2.4 fluid ounces) of water, heated to 80°C (176°F), over the matcha powder.
- Whisk: Using a chasen (bamboo tea whisk), whisk vigorously until a smooth, foamy consistency is achieved.
Enhancing Your Matcha Experience:
- Warm the Bowl (Optional): Prior to adding the matcha, warm the tea bowl with hot water. Discard the water and thoroughly dry the bowl. This helps maintain the water temperature during whisking, preventing potential bitterness.
- Sift the Matcha (Highly Recommended): Sifting the matcha powder through a fine strainer is crucial to eliminate clumps and ensure a smooth, even dispersion in the water.
- Enjoy Immediately: Consume the matcha promptly after whisking. As it cools, the flavor may become unpleasantly bitter.
