Sayaka Matcha: A Smooth Introduction to Ippodo

Sayaka matcha is an excellent choice for those new to matcha, offering a smooth, light-hearted profile within the rich category. Its sweetness and umami are beautifully balanced with just a hint of bitterness, making it an inviting tea for both beginners and connoisseurs.

Fun Fact: Sayaka and Horai are the same matcha blend, with names given by different tea schools—Sayaka by the head of Urasenke and Horai by the head of Omotesenke. The only difference is the packaging size.

As koicha (thick tea), Sayaka allows you to experience its full depth, highlighting its nuanced umami and gentle astringency. As usucha (thin tea), it is a versatile tea that’s perfect for sharing at teatime. While we typically suggest medium-to-light matcha blends with more astringency for lattes, Sayaka’s bright color, umami, and soft bitterness make it a delightful option for those who prefer a creamier, less astringent latte.

Preparation Instructions
Create a perfectly smooth and balanced cup of Sayaka matcha using this standard whisking method:

  1. Sift the Matcha

    • Measure 2 g (0.07 oz), equivalent to 1.5 heaping tea ladles or 1 level teaspoon.
    • Sift the matcha into a tea bowl using a tea strainer to ensure a silky texture.
  2. Add Hot Water

    • Use 60 mL (2 oz) of water at 80°C (176°F).
    • To achieve this temperature, boil water and cool it in a teacup before pouring it into the tea bowl.
  3. Whisk the Matcha

    • Whisk vigorously for 15 seconds in a zigzag “M” motion using a bamboo whisk.
    • Aim for a frothy, smooth consistency.

Whether you enjoy it as a traditional tea or in a creamy latte, Sayaka is an ideal introduction to the world of matcha.
