Matcha “Seiun” is renowned for its rich umami flavor and distinctive covered tea aroma, a signature characteristic of shaded tea leaves. Additionally, its delightful fragrance, derived from the young tea buds (mirume ka), enhances its appeal. This exceptional matcha is an excellent choice for tea ceremonies, particularly for preparing Koicha (thick tea), as it surpasses even the esteemed Senjin no Mukashi in quality.

How to Prepare Matcha

  1. Sift the Matcha: Measure about 2 grams (1 teaspoon) of matcha powder and sift it into a matcha bowl (chawan) to remove any clumps.
  2. Add Water: Heat water to approximately 80°C (176°F). Pour around 60 ml (2 oz) of hot water into the bowl.
  3. Whisk: Use a bamboo whisk (chasen) and whisk vigorously in a W or M motion until a thick, creamy froth forms. For Koicha, use less water and whisk gently to create a smooth, dense consistency.
  4. Enjoy: Savor the exquisite umami and aroma of your matcha.
