How to Prepare Aya no Mori
Matcha: 1 to 2g (1 to 2 scoops)
Water: 60 to 70ml at 85°C (185°F)
- Sift the matcha into your bowl to remove clumps and ensure a smooth texture.
- Add a small splash of hot water to the sifted powder and mix to form a smooth paste.
- Pour in the remaining 60 to 70ml of hot water.
- Using a bamboo whisk (chasen), whisk briskly in an M or W motion until a fine foam appears on the surface.
Temperature Note: Brewing at the recommended 85°C (185°F) is highly encouraged, as it highlights the creamy sweetness and mellow depth of this specific tea. Using water below 85°C can result in unwanted bitterness.
