Yabukita Single-Cultivar Matcha from Kyoto
Imamukashi (今昔) is a single-cultivar Japanese matcha made from Yabukita tea leaves by Shogyokuen, a long-established tea producer based in Kyoto. With a fresh vegetal character, balanced umami, and a clean finish, Imamukashi is an approachable choice for everyday matcha.
Its flavor remains distinct when prepared with milk, making it especially well suited to matcha lattes as well as traditional usucha (thin tea).
Flavor Profile
Fresh vegetal notes lead the cup, followed by a gentle savory character and light natural sweetness. A touch of astringency gives the matcha structure without overpowering its clean, refreshing finish.
A Single-Cultivar Yabukita Matcha
Imamukashi is made exclusively from Yabukita, Japan's most widely cultivated tea cultivar. Using a single cultivar gives this matcha a clear, consistent character rather than combining different cultivars in a blend.
The tea is made from first-flush tencha, giving it a fresh, green character associated with early-season tea.
Best For
Imamukashi is particularly versatile for everyday preparation:
- Usucha (thin tea)
- Hot or iced matcha
- Matcha lattes
Its bright vegetal flavor works well on its own, while its clean character remains noticeable when combined with milk.
How to Prepare Imamukashi
Usucha (Thin Tea)
You will need:
- 1.5–2g matcha
- 60–70ml water
- Water at 75–80°C / 167–176°F
- Bamboo whisk (chasen)
- Matcha bowl (chawan)
- Sifter
Steps:
- Sift the matcha into a warmed chawan.
- Add the hot water.
- Whisk briskly in a W or M motion until a fine layer of froth forms.
- Enjoy immediately.
Matcha Latte
You will need:
- 2–3g matcha
- 30–50ml warm water
- 120–180ml milk or plant-based milk
