Discover Kochou (胡蝶, “Butterfly”), one of Kouroan’s signature matchas, freshly harvested on May 21, 2025 from their own Ujitawara tea fields in Kyoto. Grown using only organic fertilizers and no pesticides, this matcha has developed a vibrant, deep green color and a smooth, refined flavor that evolves each year.

The tea is made from first-harvest leaves (ichibancha) of carefully tended tea plants, cultivated for over 13 years, with 8 years dedicated specifically to matcha production. Each year, the tea improves slightly—reflecting both the skill of the tea master and the adaptation of the tea trees to this careful cultivation method.

Kochou delivers a crisp, clean initial taste with a refreshing aroma and a lingering umami finish. As a freshly harvested matcha, it is rare and special—available only during this season. Enjoy it now, and later in the year, compare how the same tea evolves as it matures.

How to Prepare Matcha (Traditional Usucha Style)

What you’ll need:

  • 1 serving (approx. 2g) of Kochou Matcha
  • Hot water (70–80°C or 158–176°F)
  • A small sifter
  • Chawan (matcha bowl)
  • Chasen (bamboo whisk)

Steps:

  1. Sift the matcha into the bowl to ensure a smooth, clump-free texture.
  2. Add hot water (about 2 oz or 60 ml).
  3. Whisk briskly in a “W” motion until the surface becomes frothy and even.
  4. Serve immediately and enjoy the vibrant, seasonal flavor and rich umami of freshly harvested Kochou.
