How to Prepare Matsukaze Mukashi
Koicha (Thick Matcha)
Matcha: 4g (2 teaspoons)
Water: 50ml (1.7 fl. oz) at 70 to 80°C (160 to 175°F)
- Sift the matcha powder into a warm, dry tea bowl to remove clumps.
- Slowly pour the hot water directly over the sifted matcha.
- Gently knead the matcha with a bamboo whisk (chasen) in a circular motion until it forms a thick, smooth paste with no lumps.
- Enjoy immediately to savor its deep, full-bodied flavor.
Usucha (Thin Matcha)
Matcha: 2g (1 teaspoon)
Water: 75ml (2.5 fl. oz) at 80 to 85°C (175 to 185°F)
- Sift the matcha powder into a warm, dry tea bowl.
- Pour the hot water directly over the sifted matcha.
- Whisk vigorously with a bamboo whisk (chasen) in a W or M motion until a fine layer of froth forms.
- Enjoy immediately for the best flavor and texture.
