- Texture: Silky-smooth, whisking effortlessly into a light, airy froth.
- Aroma: Vibrant and clean.
How to Prepare Sakae no Shiro
Usucha (Thin Tea)
- Matcha: 2g (1 heaping chashaku or ½ teaspoon)
- Water: 70–80 ml (2.5 oz) at 176°F (80°C)
Preparation Tip: Always sift your matcha before adding water. This removes clumps caused by static, ensuring the creamy, consistent foam that characterizes a high-quality bowl of usucha.
Method:
- Preheat your chawan (matcha bowl) with hot water and dry thoroughly.
- Sift the matcha directly into the bowl.
- Add hot (not boiling) water to preserve delicate umami notes.
- Whisk vigorously in a "W" or "M" motion with a bamboo whisk until a light foam forms.
- Enjoy immediately to capture the balance of sweetness and astringency.
