Seiun Matcha: A Deeply Reflective Experience
Seiun firmly belongs in the rich category of matcha, offering a lingering finish and a robust umami profile that makes it an excellent choice for those who enjoy a reflective and satisfying tea moment.
Fun Fact: Seiun and Shoin are the same matcha blend, with their names assigned by different tea schools—Seiun by the head of Urasenke and Shoin by the head of Omotesenke. The only distinction lies in their packaging size.
For matcha enthusiasts seeking a tea with a full but balanced character, Seiun delivers. Its hearty umami and gentle sweetness leave a long, elegant aftertaste. When prepared as koicha (thick tea), it unveils its rich depth and nuanced flavors. As usucha (thin tea), Seiun is a deeply satisfying choice, perfect for daily teatime. While medium-to-light matcha blends with more astringency are typically recommended for lattes, Seiun’s bright green color and umami-rich profile make it an appealing option for those seeking a creamier, more indulgent experience.
Preparation Instructions
Create a perfectly smooth cup of Seiun matcha with this simple method:
-
Sift the Matcha
- Measure 2 g (0.07 oz), or about 1.5 heaping tea ladles or 1 level teaspoon.
- Sift the matcha into a tea bowl using a tea strainer for a fine, smooth texture.
-
Add Hot Water
- Use 60 mL (2 oz) of water at 80°C (176°F).
- Boil water, then allow it to cool in a teacup before pouring it into the tea bowl.
-
Whisk the Matcha
- Whisk vigorously for 15 seconds using a bamboo whisk in a zigzag “M” motion.
- Aim for a frothy, silky consistency.
Whether you prefer it as koicha, usucha, or even in a matcha latte, Seiun offers a rich, satisfying experience for every occasion.
