Shoin: A Rich, Satisfying Matcha
Shoin stands proudly in our rich matcha category, offering a full-bodied experience that lingers on the palate. Its deep umami flavor and elegant finish make it an ideal choice for those who appreciate a thoughtful, fulfilling matcha session.
Why Choose Shoin?
- Full-bodied and Elegant: Shoin strikes the perfect balance between richness and smoothness, offering a satisfying tea with a long, refined aftertaste.
- Versatile and Enjoyable: Ideal for those who seek a tea with complexity but not overwhelming intensity. Shoin’s hearty umami and sweet flavor make it a staple for reflective teatimes.
Preparation Instructions
-
Sift the Matcha
- Measure 2 g (0.07 oz) of matcha (1.5 heaping tea ladles or 1 level teaspoon).
- Sift the matcha through a fine tea strainer into a tea bowl for a smooth, even consistency.
-
Add Hot Water
- Heat 60 mL (2 oz) of water to 80°C (176°F).
- Pour boiling water into a teacup to cool it to the right temperature before adding it to the tea bowl.
-
Whisk
- Whisk vigorously for 15 seconds in an "M" motion using a chasen (bamboo tea whisk) until a smooth, frothy texture forms.
For a deeper exploration of Shoin’s rich character, try it as koicha (thick matcha). For usucha (thin matcha), Shoin delivers a deeply satisfying cup that’s perfect for any time of day. Although we typically recommend a more astringent matcha for lattes, Shoin’s bright color and umami richness can make it an intriguing choice for a matcha latte.
