Ryo no Kage

Kanbayashi Shunsho Ryo no Kage matcha is soft, light, and refreshingly smooth, offering a creamy, frothy texture that enhances the drinking experience. Upon the first sip, it delivers a delicate sweetness with a milky softness, followed by a slightly tart and nutty aftertaste. Its light body and mellow flavor make it an excellent choice for those new to usucha (thin matcha), as it balances subtle sweetness, gentle umami, and a refreshing finish.

Despite being an entry-level matcha, it performs exceptionally well, creating a silky, fresh, and well-rounded taste. To preserve its natural sweetness and avoid bitterness, it’s best to use water at 85°C (185°F). The result is a tea that is both calming and energizing, perfect for everyday enjoyment.

How to Prepare

Usucha (Thin Matcha)

Ingredients:

1 tsp (2g) matcha powder

2.5 fl. oz (75ml) hot water at 185°F (85°C)

Instructions:

1. Sift the matcha powder into a warm, dry tea bowl.

2. Pour the hot water over the matcha.

3. Whisk vigorously with a chasen (bamboo whisk) in a “W” or “M” motion until a fine layer of froth forms.

Enjoy immediately for the best flavor and texture.
